To make the Cookie recipe

  • 180 g hazelnuts, toasted
  • 100 g plain flour
  • 50 g cocoa powder
  • 90 g buckwheat flour
  • 60 g golden caster sugar
  • 180 g unsalted butter
  • 100 g dark chocolate, roughly chopped
  • 1 teaspoon coconut oil (or use any flavourless oil)

To make the Cookie recipe

  • Line a baking tray with baking parchment paper.

  • Put the hazelnuts into the bowl of a food processor and pulse until finely crushed.

  • Add flour, sugar and a pinch of flaked sea salt, cocoa powder. And then, process it for 20-30 seconds until fully combined. Now, add butter and pulse until the mixture just starts to come together.

  • Tip the dough out onto a work surface and knead by hand until smooth.

  • Roll the dough into 25 small balls, then transfer to the prepared baking tray. Here the role of your kid comes into play. Using his thumb, make an indent in the centre of each piece of dough. Put the tray in the fridge and chill for 30 mines before baking. Heat oven to 180C/160C fan/gas 4.

  • Bake in the oven for 15-20 mins or until light golden brown. Put the chocolate and oil in a heatproof bowl and set over a pan of simmering water, stir the chocolate occasionally, until fully melted. Use a teaspoon to top each cookie with melted chocolate. Put aside until the chocolate has set.
