Ingredients for Kala Chana Masala recipe

To make the Chana Masala

  • 3 teaspoon oil
  • 1 teaspoon cumin (jeera)
  • ½ teaspoon cinnamon powder (dalchini)
  • 3 pods cardamom (elaichi)
  • 3 cloves (laung)
  • 1 bay leaf (tej patta)
  • 1 teaspoon dry fenugreek leaves (Kasuri methi)
  • Pinch of Hing (asafoetida)
  • 1 onion finely chopped
  • 2 green chilli slit
  • 1 teaspoon ginger garlic paste
  • 1 cup tomato finely chopped
  • ½ teaspoon turmeric powder (Haldi)
  • 1 teaspoon Kashmiri red chilli powder (Lal Mirch powder)
  • 1 teaspoon coriander powder
  • 3 cup water
  • 1 teaspoon mango powder (amchur powder)
  • 1 teaspoon salt
  • ½ teaspoon garam masala
  • 1 cup black Chana (Kala Chana) soaked overnight
  • 2 tablespoon coriander leaves finely chopped

Preparation Of Kala Chana Masala recipe

To cook the Chana Masala

  • In a pressure cooker take oil and sauté cumin seeds, cinnamon powder, cardamom, cloves, bay leaf, kasuri methi and a pinch of Hing. Sauté until spices turn aromatic.

  • Now sauté onion till it turns golden brown. Further, sauté green chilli and ginger garlic paste. Also, sauté tomato until it turns soft and mushy.

  • Furthermore, add turmeric powder, chilli powder, coriander powder, mango powder and salt. Sauté on low flame, till the oil releases from tomato.Kala Chana Masala
  • Now add black Chana or Kala Chana soaked overnight. Sauté for a minute. Add water and mix well. Cover and pressure cook for 8 whistles or till Chana get cooked completely.

Kala Chana Masala

  • Now add garam masala, coriander powder and mix well. Finally, serve Kala Chana curry with rice or roti.

Tips

  • The quantity of water can be adjusted as per one’s choice. The Kala chana masala can be kept dry or with some curry.
